Hi there! 

The process of mechanical weathering that causes the surface and outside of a rock to crack and flake off is called Release of Pressure. 

As erosion removes material from the surface of the rock, pressure on the rock is reduced, this release of pressure is what causes the cracking and flaking of the rock's exterior.
